Raw Diet Recipe

This coffee substitute is a very pleasant substitute drink for coffee. Made with chicory root, dried dandelion root and cardamon seed.

Coffee Substitute

Ingredients

2 cups water
1 tablespoon roasted chicory root
1 tablespoon dried dandelion root
1/2 teaspoon cardamon seed (should be out of the husk, but not ground)

Recipe Directions

Chicory Root Flowering

Put water in a pan and add roasted chicory root, dandelion root, and cardamon seed. Simmer gently 10 minutes. Strain and enjoy.

Recipe Notes

This recipes does not taste exactly like coffee but it is dark and tasty and very good for you.

Serving suggestion: Serve with a splash of almond milk and a sprinkle of xylitol.

A Bit About Chicory (Cichorium intybus)

A native of Europe and the United States, chicory is believed to exert a diuretic effect that makes it valuable for water retention and edema. Some studies have suggested that chicory also may help to reduce blood cholesterol levels and lower a too-rapid heart rate. In addition, this popular herb has been used for liver, gallbladder and spleen problems.
