Fat Free Whipped Cream

Fat Free Cool Whip is fantastic, but maybe you'd like to save a little and make your own Fat Free Whipped Cream -- or keep this for an emergency when you run out! However you use this, you'll reap great fat-fighting rewards! This is a fantastic and fat-free substitute for the real thing. If you are lactose intolerant, you can use lactose-free milk to make your own fat free, lactose free whipped topping!
1 quart skim milk
1/2 cup powdered sugar
1 teaspoon vanilla extract
Place milk in freezer for one hour. Remove and pour into a tall cylindrical container.
Using an immersion blender, start at the bottom and slowly draw the blender up at a tilt. Gradually add confectioners' sugar while continuing to move blender up and down to build volume. When milk begins to form soft peaks, mix in vanilla extract. Serve immediately.
Play with this a bit and use any flavor of extract -- customize it to your low-fat dessert!
