Anti-Coronary Sour Cream
Low Fat Recipe
Anti-Coronary Sour Cream is not bad for a sour cream replacement! Use fat-free cottage cheese to make this completely non-fat.
2 tablespoons lemon juice
3 tablespoons liquid skim milk or fat free buttermilk
8 ounces of cottage cheese
Place lemon juice and milk in blender. Add the cottage cheese slowly while on low speed. Blend two to five minutes on high speed.
If, when standing, sour cream becomes too thick, thin it out with skim milk or fat-free buttermilk to desired consistency.
Sour Cream Dip
Enjoy your favorite fruits with this lightly spiced sour cream dip. Use regular sour cream or half sour cream and half yogurt if you prefer.
2 tablespoons sugar
1/8 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1/8 teaspoon ground allspice
1/8 teaspoon salt
1 cup light dairy sour cream
1/2 teaspoon pure vanilla extract
1/8 teaspoon rum emulsion
Place sugar, cinnamon, nutmeg, allspice, and salt in a small bowl and stir until well combined.
Place sour cream in separate bowl and stir sugar mixture into sour cream. Add vanilla and rum extracts and stir.
Spoon into serving dish, cover, and refrigerate at least 2 hours. Serve with your favorite fresh fruit.
Recipe Note: You can substitute rum extract in place of the rum emulsion; however, this may not lend as much pure rum flavor as the emulsion. For flavoring, professional bakers almost exclusively use emulsions over alcohol-based extracts.
