This recipe for Tomato Scallion Omelet makes 4 healthful omelets with onion, scallions, fresh tomato, cream and Mozzarella cheeses.

Tomato Scallion Omelet


2 tablespoons unsalted butter
1/2 cup onion, finely chopped
6 eggs, beaten
2 scallions, sliced
1/4 cup cream cheese, cut into small pieces
1 tomato, seeded and chopped
1/3 cup shredded mozzarella cheese

Recipe Directions

Turn on broiler. Melt half the butter in a heavy ovenproof skillet over medium high heat. Saute onion about four minutes or until onion turns translucent. Transfer to a bowl and set aside.

Melt remaining butter in skillet. Add eggs and salt and pepper to taste and cook about 1 minute until edges are just set. Tilt skillet and lift edge of omelet so uncooked eggs will flow under. Cook another two minutes.

Sprinkle sauteed onion and remaining ingredients over omelet. Place omelet under broiler two to three minutes or until cheese is melted.
