Low Carb Recipe
This Strawberry Shortcake recipe is for the shortcake part of a strawberry shortcake. It creates a meringue-like base to layer up your favorite whipped cream and strawberries atop.
2/3 cups egg white powder
2 cups sugar substitute
2 cups water
Mix ingredients together in a blender. Blend on high for 1 minute.
Pour into custard cups or a pie plate.
Set into a big pan of water filled 3/4 full. Set all in oven and bake 40 minutes. Cool and keep refrigerated.
- Add a packet of diet swiss miss cocoa mix and substitute coffee for some of the water for mocha custard.
- Add 2 packets Nestle Choc-o-bake for chocolate custard. Slice it thin and keep it in a plastic container for portable breakfast.
High in vitamin C and other cancer-fighting antioxidants, strawberries also boast a lot of fiber, plus some iron and potassium. One cup of sliced strawberries is a mere 50 calories, making them a fresh choice for snacking.
