Pumpkin Bars

Low Carb Recipe

Great pumpkin bars using almond flour which lends a nice nutty flavor. Spiced nice with cinnamon. Brown Sugar Twin keeps the carbs out while olive oil is the "good" type of fat for texture.

Pumpkin Bars


3/4 cup almond flour
3/4 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
2 eggs
2/3 cup canned pumpkin
1/4 cup olive oil
1/2 cup nuts of choice

Recipe Directions

In a bowl, beat eggs and Brown Sugar Twin. Add oil and mix until combined.

Add the dry sifted ingredients together with pumpkin and nuts.

Pour in 8 x 12-inch greased baking pan.

Bake at 350 degrees for 30 minutes. Cool five minutes; remove from pan and frost if desired.

Cut Pumpkin Bars into 2 x 4-inch squares to make 12 bars.
