These Peanut Butter Shortbread Cookies are very easy and have a delicious shortbread texture even though there is no flour or butter in the recipe! The yummy flavor of the peanut butter really comes through.

Peanut Butter Shortbread


1 cup fresh peanut butter
1 cup sugar substitute
1 egg
1/2 teaspoon vanilla

Recipe Directions

Blend all ingredients together with electric mixer.

Drop batter onto a greased cookie sheet by the tablespoon (makes about 20). Press them down with the tines of a fork or bottom of a glass to flatten because they will not spread.

Bake Peanut Butter Shortbread Cookies on the top rack of a 350 degree oven for 10 to 12 minutes or until golden brown on top.

Recipe Note

Watch these closely while they are baking, because the bottoms tend to brown before the tops.
