Lemon and cream cheese always pair up beautifully in these tangy Lemon Bars! Sugar free lemon Jello lends the lemony flavor. You can opt for either sugar substitute or use the real thing in this recipe.
3 oz. box sugar-free Lemon Jell-O
1 cup water, boiling
8 oz package cream cheese, softened
15 oz can evaporated milk
1 cup sugar, (or Fructose equivalent or 12 packets of sugar substitute
1 teaspoon vanilla
Dissolve the lemon jello in the hot water as described on the Jell-O package instructions.
Beat the cream cheese until it is soft and creamy.
Add evaporated milk to the cream cheese then blend in the sugar substitute and vanilla.
Fold in lemon gelatin carefully, until all ingredients are well blended. Pour into a 9 x 9-inch or 9 x 13-inch baking pan and chill thoroughly before slicing into bars.
