This Layered Peanut Butter Pie is a lot of work but it tastes great and is well worth the effort. The pie is very rich and you may get more than 8 slices. The pie is only about 1-1/2 inches high.

Layered Peanut Butter Pie


1 cup crushed or ground pecans
4 teaspoons melted butter

2 tablespoons butter
1 ounce unsweetened chocolate
2 tablespoons cream
1 teaspoon vanilla
8 packets Equal Sweetener Packets

Peanut Butter:
5 tablespoons peanut butter
4 ounces cream cheese
1/3 cup Stevia Spoonable Sweetener

Whipped Cream:
1 cup heavy cream
1 teaspoon vanilla
1 tablespoon cocoa

Recipe Directions

Crust: mix pecans and butter. Pour in pie plate, spread to cover bottom of plate and put in freezer.

Chocolate layer: Melt butter and chocolate in microwave approximately 2 minutes. Mix in cream and vanilla. Stir well. Add Equal. Pour over frozen pie crust and put back in freezer.

Peanut Butter layer: Mix peanut butter, cream cheese and Splenda with food processor or blender. Spread over frozen pie.

Whip cream with vanilla and cocoa until stiff peaks. Spread over pie and refrigerate.
