Almond Joy Balls
Low Carb Recipe
Inside Out Almond Joy Balls with unsweetened chocolate and butter, almond butter, extracts, sweeteners, chopped almonds and coconut make these treats taste much like an authentic Almond Joy Bar.
2 ounces unsweetened chocolate
3 tablespoons butter
2 tablespoons almond butter
2 tablespoons cream
1/2 teaspoon vanilla or almond extract
2 tablespoons Equal spoonful
3 packets Sweet 'N Low
1 cup finely chopped almonds
Frozen unsweetened coconut
Melt chocolate and butter carefully in the microwave. Stir in almond butter and set aside.
Mix together the cream and vanilla extract. Add sweetener to cream mixture and stir until dissolved. Add to chocolate mixture; stir in chopped frozen almonds.
Scoop a bit of the chocolate mixture with a teaspoon.
Drop mixture into bowl of coconut. Roll chocolate in coconut, forming a ball as you coat it with coconut.
Chill until serving.
Recipe makes 30 small balls or 24 larger ones.
Variation: Almond Joy Bars
2 tablespoons unsweetened cocoa
4 tablespoons Thick n' Thin not/Sugar *
20 packets Splenda
8 oz cream cheese
2 teaspoons vanilla
1 teaspoon coconut extract
4 tablespoons melted butter
2/3 cup unsweetened shredded coconut
2/3 cup coarsely chopped almonds
*not/Sugar is a product by Expert Foods that adds the bulk of sugar to a recipe, but not the sweetness. Several web sites sell it.
Melt butter in microwave, add cocoa, splenda, not/Sugar, cream cheese, extracts and mix well. Stir in coconut and nuts. Pour into 8 x 8-inch pan and freeze. Before fully frozen, make cuts for bars (16). Once frozen, remove bars from pan and put in sealed container. Keep in freezer or refrigerator.
Total 54 carb (36 NET carbs). Makes 16 at 2.3 carbs each.
