Low Carb Recipe

For Crustless Quiche, sprinkle Cheddar and mozarella cheese in large quiche pan then place your ham on top. Mix the cream mixture, pour over all and bake. Quiche makes a delicious, light main-dish, too.

Crustless Quiche

1/2 pound chopped ham
1 cup shredded Cheddar
1 cup shredded Mozzarella
1/2 cup heavy cream
1/2 cup water
5 eggs
3/4 cup chopped broccoli
Salt, black pepper, dill, dry mustard to taste

Sprinkle cheeses in large quiche or pie pan, lightly sprayed with nonstick cooking spray. Put ham and well-drained broccoli over cheese. Beat remaining ingredients and pour over top. Bake in pre-heated 350-degree oven 30 minutes.

Note:  You can substitute any vegetable you like, if desired.

Deep-Dish Quiche Pizza

Bacon Cheese Quiche with crispy bacon, eggs and heavy cream seasoned with thyme and ground white pepper. The two cheeses are Gruyere and white Cheddar. Rich and delicious.

4 ounces cream cheese
3 eggs
1/4 cup Parmesan cheese
1/3 cup heavy cream
1/2 teaspoon oregano
2 cups shredded Italian cheese (mozzarella, romano, Parmesam mix, or your choice)
1/4 teaspoon garlic powder
1/4 cup pizza sauce
1 cup shredded Mozzarella
20 slices pepperoni

Beat cream cheese and eggs until smooth. Add cream, parmesan and spice. Spray 13 x 9-inch baking pan with nonstick cooking spray. Put 2-cups pizza cheese in dish and pour egg mixture over. "Squish" around to mix.

Bake at 375-degrees for 30-40 minutes until well browned. Remove from oven and cool. When you're ready to eat, spread on pizza sauce, sprinkle on mozzarella, and layer with pepperoni (or any toppings you choose). Bake about ten minutes in 375-degree oven until the toppings are bubbly and brown. Recipe makes 4 servings.

Bacon Cheese Quiche

Bacon Cheese Quiche with crispy bacon, eggs and heavy cream seasoned with thyme and ground white pepper. The two cheeses are Gruyere and white Cheddar. Rich and delicious.

10 strips bacon
4 large eggs
1 cup heavy cream
1/2 cup water
1/4 teaspoon dried thyme
1/8 teaspoon freshly ground white pepper
1/2 cup shredded Gruyere cheese
1/2 cup shredded white Cheddar cheese

Preheat oven to 375 degrees.

In medium skillet, cook bacon over medium heat until crisp (approximately 8 to 10 minutes). Transfer to paper towel to drain.

In a small bowl, whisk together the eggs, cream, water, thyme and pepper. Pour into greased pie dish. Crumble bacon. Sprinkle the egg mixture with the bacon, Gruyere cheese and Cheddar.

Bake until golden and custard is set, (about 30 minutes). Allow to cool 10 minutes before slicing. Enjoy! Yields 6 servings, 2 carbs each.

Bacon Cheeseburger Quiche

This Bacon Cheeseburger Quiche can be packaged in Ziplocs or plastic containers for meals quickly microwaved over the next 3 to 5 days. Does not freeze well.

1 pound very lean hamburger
1 small chopped onion
4 slices bacon, broken into bits
3 eggs
1/2 cup mayonnaise
1/2 cup half-and-half
8 ounces shredded Chedder or Swiss cheese
Garlic powder to taste (optional)
Freshly ground white pepper to taste

Brown hamburger in skillet with onion. Remove and mix in bowl with bacon pieces, breaking up any larger clumps with a fork or pastry mixer until you have a fine mix. Drain well of any excess grease and press into the bottom of a deep-dish pie pan. Set aside.

Preheat oven to 350 degrees.

Combine remaining ingredients in mixer bowl and whip well. Pour mixture over beef "crust" and bake 40 to 45 minutes until top is browned and "set". Cool 15 to 20 minutes before slicing.

Nutrition Information: Recipe makes 6 servings, 2 carbs each.

Cheeseburger Quiche

1/2 pound ground beef
1/3 cup chopped onion
2 eggs
1/2 cup mayonnaise
1/4 cup cream
6 ounces shredded Cheddar cheese
Salt and pepper

Brown ground beef and onion. Drain. Beat eggs and mix in mayonnaise, cream, cheese and seasoning. Put beef mixture in sprayed pie pan. Pour custard over. Bake at 350 degrees for 45 minutes. Let stand 10 minutes before cutting. Serves 3 at 3 carbs. Can add mushrooms or any other vegetable - just include the carbs.

Quick Quiche

Quiche is a really good way to have eggs, however, the crust is not suitable for a low carb diet recipe. Use nonstick cooking spray instead and thoroughly spray your pie pan.

Break a half dozen eggs into a bowl and beat them with a mixer until they are frothy. Pour them into the pie pan. From here, use your imagination and combine some of the following for a yummy crustless quiche:

  • Ham chopped in cubes
  • Grated cheeses
  • Broccoli flourettes
  • Chopped asparagus
  • A few chopped bell peppers
  • Chopped celery chopped
  • Grated zucchini

Fill the egg mixture with one or more of these ingredients and bake for about 30 minutes, or until set and lightly browned.
