Low Carb Recipe
Three variations of meatballs - basic, feta and olive and some with a little kick - taco meatballs.
Baking makes these Baked Meatballs so tender. Meat consists of ground veal, pork and beef with onion and Parmesan.
1 tablespoon olive oil
1/2 onion, finely chopped
3 garlic cloves, minced
1/2 pound ground veal
1/2 pound ground beef
1/2 pound ground pork
1/2 cup grated Parmesan cheese
1/2 teaspoon salt
1/4 teaspoon freshly-ground black pepper
Heat oven to 375 degrees.
In a skillet, over high heat, cook onion 5 minutes, until softened; add garlic and cook 1 minute more. Transfer to a bowl and mix in ground meats, cheese, eggs, salt, and pepper.
Roll golf ball size meatballs; arrange on a jelly roll pan. Bake 20 to 25 minutes, until browned and cooked through.

Feta and Olive Meatballs
You don't really need any salt in this recipe as the feta and olives provide enough. You can also fry the meatballs in olive oil, but you may find broiling is easier! Try the spice mixture. It tastes great in the meatballs.
1/2 cup chopped parsley
2 tablespoon finely chopped onion
1 pound ground lamb or beef
1/2 cup crumbled feta cheese
1/2 cup pitted green olives, coarsely chopped
2 tablespoons spice mixture or 1 teaspoon dried oregano
Combine all the ingredients with your hands and shape into 16 meatballs. Place the meatballs about 2-inches apart on a baking sheet and broil, about 3-inches away from the heat until browned on top. Turn over and broil on the other side.
Lean ground beef with taco seasoning, green onion, eggs, garlic and sharp Cheddar cheese.
1-1/2 pound lean ground beef
1 package taco seasoning mix
1 green onion, finley diced
2 eggs (or 1/2-cup liquid egg substitute)
1 clove garlic, minced (optional)
1 block sharp Cheddar cheese, cut into small cubes
Preheat the oven to 425-degrees.
Beat eggs and mix all ingredients except the cheese together. Mold a tablespoon of meat around a cube of cheese to form a small shaped meatball. Repeat with all meat.
Place on edged cookie sheet (sprayed with nonstick cooking spray) and bake at 425-degrees for seven to ten minutes or until meat is done and cheese has melted. Recipe makes 10 to 15 servings.
Serving size: 1 meatball
Less than 1g carbohydrate per meatball.

At the turn of the 19th & 20th centuries in the U.S., meat was inexpensive and plentiful. Since meat was inexpensive, the Italian immigrants who brought their recipe for polpette (meatballs) to America paired the larger sized meatballs with pasta.
