Low Carb Recipe

Instead of carb laden potatoes, try these recipes for a Mashed Not Potatoes side dish using cauliflower. It's easy with a little butter, sour cream and salt and pepper to taste.

Mashed Not Potatoes

Ingredients

1 head cauliflower, trimmed, washed and cut into chunks
3 tablespoons butter
3 tablespoons cream or sour cream
Salt and black pepper, to taste

Recipe Directions

Steam the cauliflower until well-cooked. Add 2 to 3-tablespoons of butter to the cauliflower and mash.

Note:  If you like the cauliflower mixture a little chunky, use a potato-masher or mixer. If you like it very smooth, use a stem or wand-type mixer.

Add cream, a tablespoon at a time to the cauliflower mixture, until desired consistency. Salt and pepper to taste.

Serving Suggestion: Twice-Baked Not-Potato Casserole

Add grated Cheddar cheese, bacon bits (optional), a beaten egg or some sour cream, and put in a casserole dish. You can top with more grated cheese, if desired. Broil until top is browned.


Mock Mashed Potatoes

Cooked cauliflower processed with sour cream. Garnish with grated cheese and fresh minced chives.

2 cups * cauliflower, finely chopped
1 tablespoon sour cream, or more to taste
1 tablespoon butter
Salt and black pepper to taste

*Frozen cauliflower works very well.

Steam or microwave cauliflower until very soft. Put cauliflower in blender or food processor with butter and sour cream, blend. Add salt and pepper to taste. Serve hot.

Notes: Grated cheese, minced chives and/or parsley are nice variations to add. Hand mix these in after blending the cauliflower. Recipe makes 2 servings.

Bonus: Hamburger Gravy and Mock Mashed Potatoes

Hamburger Gravy over Mock Mashed Potatoes

1 medium onion
1/2 pound ground beef
1 teaspoon garlic powder
Salt and pepper to taste
1/8 cup sour cream
2 ounces cream cheese
1/2 bag frozen cauliflower
2 tablespoons butter

Saute onion in oil in pan. Add meat and brown. Add spices and water and cook until water boils. Turn down heat. Add sour cream and cream cheese and simmer 10 minutes until gravy thickens. (Do not boil).

Mash cauliflower with butter, salt and pepper. Serve hamburger "gravy" over "potatoes." Serves 2 at 10 carbs each (7 NET carbs).
