Low Carb Recipe

Turkey Bundles are an Asian inspired dish made with ground turkey, pork rinds, soy sauce and a wonderful Thai dipping sauce for which we have included the recipe.

Turkey Bundles


1-1/2 pound ground turkey
1 beaten egg
1/2 cup coarsely chopped water chestnuts
1/3 cup crushed pork rinds
1 tablespoon soy sauce
1 tablespoon lemon juice
1 packet sweetener
1/4 teaspoon salt
Dash each: Red pepper, ginger
12 lettuce leaves
Thai Dipping Sauce (Recipe below)

Recipe Directions

Heat oven to 375 degrees.

Combine all ingredients except lettuce and mix well.

Shape into twelve 4 x 1-1/2 s 3/4-inch loaves. Brown in frying pan. Wrap each loaf in a lettuce leaf and serve with dipping sauce.

Thai Dipping Sauce

This was very good, but with an unusual "fishy" flavor. If it's too "fishy" for you, decrease the amount of fish sauce.

Bowl of Thai sauce 1/4 cup lemon juice
3 teaspoons fish sauce
1 tablespoons cilantro
1 packet Equal
1 teaspoons soy sauce
Pinch crushed red pepper
1/2 teaspoon sesame oil

Combine all ingredients. Total: 11 carbs.
