Low Carb Recipe
A fabulous Southwestern Chicken main dish! Chicken breasts are flavored with garlic, taco seasoning, green chiles, mustard and a four cheese Mexican blend. Sour cream and chicken broth make it moist and tender.
1 tablespoon oil
1 tablespoon butter
2 garlic cloves, minced
4 chicken breasts, chunked
1 cup chicken broth
4 ounces canned green chiles
1 teaspoon prepared mustard
1 cup sour cream
8 ounces Sargento 4 cheese Mexican blend
Melt oil and butter in frying pan. Add chicken, sprinkle with taco seasoning, and brown. Add garlic and saute.
Add chicken broth, undrained chiles and mustard. Simmer, uncovered, until liquid cooks down and is syrupy. Add sour cream and heat. Sprinkle with cheese. Cover and simmer few minutes until cheese melted.
Recipe makes 4 servings
Variation: Southwest Chicken Burgers
1 pound ground chicken
1/2 cup zucchini, shredded
2 tablespoons green chiles, chopped
1/2 teaspoons each cumin and salt
Pepper to taste
1/2 cup salsa
2 tablespoon green onions, chopped
2 tablespoon fresh cilantro, chopped
1 tablespoon plain non-fat yogurt
Combine chicken, zucchini, chiles, and spices. Shape into 4 patties and fry until no longer pink in center. Combine remaining ingredients in small bowl and serve over patties. Makes 4 at 4 carbs each.
Not all ground poultry is as healthy as one may think. Ground turkey or chicken often includes the skin and dark meat, adding a lot of fat and calories. Look for lean or breast on the label to ensure it includes only breast meat, which is much leaner.
