Skillet Chicken Dijon
Low Carb Recipe
Boneless, skinless chicken breasts flavored with garlic, white wine, soy sauce and Dijon mustard.
4 boneless chicken breasts
3 tablespoons oil
2 garlic cloves, minced
3 tablespoons white wine
3 tablespoons soy sauce
2 tablespoons Dijon mustard
Heat oil in a skillet; then add the minced garlic and cook, stirring often for about 3 minutes.
Add the chicken breasts and saute until browned. In a separate bowl, mix wine, soy sauce and mustard. Pour generously over the chicken. Cover and cook until done.
Spoon the sauce over the chicken when serving, or pour extra sauce into small dipping dishes to serve.

12 oz boneless, skinless chicken breasts
3 tablespoons butter, melted
2 teaspoons Dijon mustard
Dash garlic powder
Sage, cinnamon, paprika, pepper
2/3 cup crushed pork rinds
2 tablespoons grated Parmesan
1-1/2 teaspoons soy flour
2 tablespoons butter
Preheat oven to 350 degrees. Melt 3 tablespoons butter and mix with mustard, garlic and all spices. Mix crushed pork rinds, Parmesan and soy flour and place in shallow dish. Cut each breast in half lengthwise. Coat chicken well with mustard mixture, then roll in rind mixture. Place in shallow baking dish, dot with butter, and bake covered about 30 minutes, then uncover and bake additional 15 minutes. Serves 2 at 1 carb each.
