Shrimp Stuffed Eggs
Low Carb Recipe
Boiled shrimp with mayonnaise, sugar substitute, celery seed, salt, chopped chives and hard boiled eggs.
1 pound shrimp, boiled, peeled and chopped fine
1/4 cup mayonnaise
1 packet sweetener
1/8 teaspoon celery seed
1/8 teaspoon salt
1 tablespoon chopped chives
1 dozen small hard boiled eggs, peeled
In a medium bowl, mix shrimp, mayonnaise, sweetener, celery seed, salt and chives.
Halve eggs lengthwise; scoop out yolks (save for another use, such as a topping for salads). Fill whites with shrimp mixture. Refrigerate before serving.
