Low Carb Recipe
Shredded Beef using beef chuck stew meat seasoned with garlic, chili powder, oregano, cumin and salt and pepper.
2 pounds stew meat
1-1/2 cup water
2 cloves garlic
2 teaspoons chili powder
1 teaspoon vinegar
2 teaspoons oregano
1 teaspoon cumin
Salt and pepper to taste
Brown beef in oil. Add all other ingredients, bring to boil, cover and simmer 90 minutes or longer until very tender.
Uncover and boil until liquid almost evaporated. With 2 forks, shred meat.
Can mix with barbecue sauce and serve over Atkins Rolls, or top with grated onion, shredded jack cheese and salsa. (Carbs for these items NOT included below).
