Chicken Sausage Casserole
Low Carb Recipe
A rich and very satisfying Chicken and Sausage Casserole. Chicken breast and sausage combine with seasonings, cream cheese, shredded Cheddar and fresh mushrooms.
Ingredients
3 to 4 chicken breasts, pounded even but not too thin
Salt, pepper and garlic powder to taste
2 tablespoons olive oil
1/4 pound sausage
4 ounces cream cheese, soft
1 cup shredded Cheddar, divided
8 ounces fresh mushrooms, sliced
Recipe Directions
Season chicken, brown 3 minutes on each side in olive oil. Set aside.
Crumble and cook sausage until brown. Drain well. Preheat oven to 350 degrees. Spray casserole dish and place mushrooms in bottom. Place chicken on top. Mix sausage, cream cheese, 1/2 Cheddar cheese and spoon (and smooth) over chicken. Cover and bake 30 minutes.
Remove cover, sprinkle with remaining cheese and bake 15 minutes until chicken is completely cooked.
