Chicken Fajita Casserole
Low Carb Recipe
A great Chicken Fajita Casserole using chicken breast meat seasoned with taco seasoning, salt, pepper and garlic. Onions, peppers, salsa and cheese are placed on top before broiling. Jack cheese adds finishing flavor.
1 tablespoon oil
1 pound chicken breast, cut in strips
2 teaspoons taco seasoning mix Salt, pepper, garlic powder to taste
1/2 cup onions, thinly sliced 1 cup red and green pepper strips
1/2 cup salsa
8 ounces jack cheese, shredded
Brown chicken in oil, and stir in seasonings. When chicken is done, remove from pan. Add onions and peppers and cook a few minutes until crisp-tender. Put chicken into casserole dish. Top with onions and peppers. Spread salsa on top and sprinkle with cheese. Put under broiler for few minutes until cheese is bubbly and melted.
