Cabbage Lasagna

Instead of carb-laden noodles, this Cabbage Lasagna recipe uses cabbage. You may be surprised at how close this tastes to real lasagna with the oregano, tomato paste, Mozzarella, etc. The humble cabbage is a very versatile vegetable. It's great for coleslaw, but cabbage can bring so much more to your table. Some varieties are great sources of vitamin C.

Cabbage Lasagna


1 pound ground chuck
1 cup chopped onion
1/2 chopped green pepper
1 medium head cabbage
1/2 teaspoon salt
1/8 teaspoon black pepper
1/2 teaspoon oregano
1 small can tomato paste
8 slices (1 ounce each) mozzarella cheese

Recipe Directions

Brown ground chuck, onion, green pepper.

Boil cabbage until tender then set aside, saving 2 cups of liquid.

Combine 2 cups of liquid, oregano, tomato paste, salt and pepper and simmer, stirring often. Add meat mixture to sauce pan. Simmer and stir often.

In a buttered 9 x 13-inch pan, layer cabbage and tomato mixture. Top with mozzarella cheese slices as your very last layer only.

Bake 400 degrees for 30 minutes until cheese is browned.
