Ham And Split Pea Soup

This makes a fantastic Ham And Split Pea Soup for anyone, not just low carbers. Diced smoked ham with onion, green split peas, chicken broth all seasoned with sage, salt and pepper.

2 tablespoons olive oil, divided
1 1/2 cups diced smoked ham
1 small onion, chopped
1 cup green split peas
1 can chicken broth (14-1/2 oz) mixed with 1 can water
1/2 teaspoon dried sage leaves
Salt to taste
Freshly ground black pepper to taste

Heat 1 tablespoon oil in a large saucepot over medium heat. Cook ham 5 minutes, or until lightly browned. Remove with a slotted spoon and set aside.

Add remaining tablespoon of oil to pot. Cook onion 5 minutes, until softened. Add peas, broth mixture and sage. Bring to a boil. Reduce heat to low and cook 35 minutes, or until peas are tender.

Puree half the soup in a blender, and return to pot along with reserved ham. Cook over medium heat 10 minutes for flavors to blend. Add salt and pepper to taste.

Ham and Cheese Soup

Tender ham in Ham and Cheese Soup flavored with onions, celery, bell pepper, bay leaf, basil in chicken stock. Chopped green onions garnish.

1 tablespoon olive oil
1/2 cup chopped onions
1/2 cup chopped celery
1/4 cup chopped bell pepper
1 cup diced ham 4 cups chicken stock
1 bay leaf
1/2 teaspoon dried basil
1/4 cup cream
1/4 cup grated Cheddar cheese
3/4 cup cubed Velveeta cheese
Chopped green onions for garnish

Fry all onions, celery, and bell pepper in oil until tender. Add ham and saute to release some oils and meld the flavors. Add stock/broth, bay leaf, and basil.

Simmer to reduce slightly (20 to 30 minutes). Add cream and return to boil to thicken a bit. Slowly add cheese - stirring constantly.

Serve immediately. Garnish with green onion. This recipe yields 8 servings.

Ham And Bean Soup

Ham And Bean Soup with very healthful veggies and seasonings with soy beans and cubed ham cooked into a delicious and hearty low carb soup.

Ham and Bean Soup with Crackers

8 ounces cubed ham
1/4 cup finely diced celery
1 cup water
1 cup low sodium chicken broth
1 can Eden black soy beans
1/4 cup tiny diced carrots
2 teaspoons minced onion
1/4 teaspoon minced garlic (optional)
1/8 teaspoon cayenne pepper
1/4 teaspoon cumin
1/4 teaspoon salt

In a medium sauce pan, brown the ham. Add 1 cup of water and scrape glaze off bottom of pan. Add low-sodium chicken broth.

Drain the water from the can of beans. Add beans to the sauce pan.

Add all other ingredients. Stir. Bring to a boil; turn down heat and simmer for at least 1 hour to bring out the flavors -- the longer, the better (3 plus hours being best.)
