Low Carb Recipe
Flourless Crepes are made with an egg, cream, oil, sugar substitute and vanilla - ingredients most low carbers have on hand. Ricotta filling included.
1 large egg
1 tablespoon cream
1 teaspoon oil
1/4 teaspoon sugar substitute (adjust to taste)
1/8 teaspoon vanilla
Mix all ingredients together well; put in a well buttered nonstick frying pan and swirl to coat pan.
Cook at medium-heat until top looks dry; flip over and cook for a few more seconds.
Place on a plate, add your favorite filling and roll up.
1/3 cup ricotta cheese
1 packet sugar substitute
Mix well. This will fill both crepes.
Total carbs: 5.5g per crepe.
Flourless Crepes II
Similar to the Flourless Crepes, but just a tad more rich and not quite as sweet for those with less of a sweet-tooth.
4 tablespoons heavy cream
Dash salt and black pepper
Whisk ingredients together.
Heat little oil in 8-inch nonstick frying pan. Pour about a 1/4-cup egg mixture in at a time, swirling pan quickly to cover bottom in thin layer.
Let cook few minutes until bottom is brown; carefully flip. Lightly brown other side and remove from pan. Repeat with balance of batter.
