Low Carb Recipe
For Crabamole Salad with Guacamole Dressing, feel free to substitute the seafood of your choice for the crab such as flaked, cooked lobster or small salad shrimp. Just do not use fake seafood, as it contains a lot of added carbs.
24 ounces bagged mixed greens
1 pound cooked lump crabmeat
1 batch Guacamole Dressing (see below)
16 cherry tomatoes
Arrange the mixed greens on four serving plates.
Top each with crabmeat, then top that with the Guacamole Dressing, letting it run artictically down onto the greens.
Cut the cherry tomatoes in half and arrange them around each portion. Serve.
