Cinnamon Nut Bread

This recipe makes a great Cinnamon Nut Bread with a wonderful cinnamon flavor. It does not rise much but the taste and texture are great.

Cinnamon Nut Bread

Ingredients

1/2 cup vital wheat gluten
1 tablespoon flaxseed meal
1 tablespoon wheat bran
4 tablespoons ground walnuts
2 tablespoons sweetener
1 teaspoon cinnamon
1 teaspoon baking soda
1/4 cup heavy cream
1 teaspoon vanilla
1 tablespoon oil
2 tablespoons water

Recipe Directions

Beat wet ingredients together. Blend dry ingredients. Mix together gently.

The batter should be the texture of oatmeal.

Spray or butter a small loaf pan (4 x 6). Spread mixture into pan. Bake 30 to 40 minutes.

Recipe Note

Vital wheat gluten is like a super-powered flour that is all gluten and very little starch. It's not technically flour itself, but it's made from wheat flour that has been hydrated to activate the gluten and then processed to remove everything but that gluten. It's then dried and ground back into a powder. It's not easy to find at the supermarket, but can often be found at health food stores, specialty stores or online.
