Three variations of tuna casserole - a Siciliana, a more basic recipe and a tuna noodle casserole delight.

Tuna Casserole

Tuna Casserole with Noodles

A delicious Tuna Casserole with Noodles given a nice crunchy topping of bread crumbs and Parmesan cheese.

Filling:
1/2 teaspoon olive oil
1/2 cup chopped onions
1/2 cup chopped bell peppers
10-3/4 ounce can low fat cream of mushroom soup
1 cup fat free shredded Cheddar cheese
1 cup fat free plain yogurt
1/4 teaspoon crushed red pepper
1/2 teaspoon black pepper
8 ounces elbow macaroni - cooked
12-1/4 ounce tuna in water, drained and flaked
2 cups frozen corn kernels, thawed

Topping:
1/2 cup bread crumbs
1/4 cup fat-free Parmesan cheese

Preheat oven at 350 degrees. In a 12-inch skillet heat oil over medium heat. Cook onions and bell peppers until tender. Add soup, Cheddar cheese, yogurt, crushed red pepper, black pepper, macaroni shells, corn kernels, and tuna just until combined. Pour entire mixture into 2-1/2 quart casserole dish. Meanwhile, combine bread crumbs and Parmesan cheese. Sprinkle on top of the vegetable mixture. Bake for 30 minutes.

Recipe Note: This recipe can be made ahead and stored in an airtight container for up to three weeks in the refrigerator or at room temperature.

Tuna Noodle Casserole Delight

This tuna salad uses no yolks noodles with low fat cream of mushroom soup, tuna in water, frozen green peas and white bread crumbs.

4 cups water
2 cups No Yolks egg noodles, uncooked
1 teaspoon salt
1/2 cup skim milk
10-3/4 ounce can low fat cream of mushroom soup
6 ounces tuna in water, drained and flaked
2 cups frozen green peas, thawed
1/4 cup white bread crumbs

Preheat oven to 350 degrees. Prepare a 2-quart casserole dish with cooking spray; set aside.

Heat water to boiling. Add noodles and salt. Boil for 9 minutes and drain. Add milk to soup and mix well. Arrange half of noodles, half of tuna, half of peas, and half of soup mixture in layers in prepared dish. Repeat layers. Sprinkle bread crumbs on top. Bake for 30 minutes. Recipe makes 6 servings.

Tuna Casserole Siciliana

Tuna and Macaroni Casserole Siciliana with Tuna and pasta with onions, bell peppers, garlic, tomatoes seasoned with parsley, basil, oregano and lemon juice.

12 ounces tuna in water, drained and flaked
1/2 teaspoon olive oil
1/2 cup onions, chopped
1/2 cup bell peppers, chopped
1 clove garlic, minced
14-1/2 ounce can crushed tomatoes
8 ounce can no-salt-added tomato sauce
2 tablespoons parsley
1 teaspoon salt
1/2 teaspoon granulated sugar
1/2 teaspoon basil
1/2 teaspoon oregano
1/2 teaspoon lemon juice
1/2 cup elbow macaroni, cooked
1/4 cup fat free Parmesan cheese

In a skillet, heat oil over medium flame. Add onions, bell peppers, and garlic. Cook until all is tender. Stir in crushed tomatoes, tomato sauce, parsley, salt, sugar, basil, oregano, and lemon juice. Cover and simmer 30 minutes.

Stir in tuna and cooked elbow macaroni. Heat over low flame, 5 minutes. Sprinkle with Parmesan cheese and serve. Recipe makes 8 servings.
