Delicious pumpkin muffins recipe makes six Pumpkin Muffins each weighing in at only 115 calories.

Pumpkin Muffins

Ingredients

2/3 cup non-fat dry milk
6 tablespoons flour
1 teaspoon baking soda
Sugar substitute to equal 12-teaspoons sugar
2 teaspoons pumpkin pie spice
1 teaspoon cinnamon
2 eggs
1 cup canned pumpkin
1 teaspoon vanilla
1/2 cup grated carrots or zucchini
4 tablespoons raisins

Recipe Directions

Prepare a muffin pan with non-stick spray or muffin liners (preferably aluminum foil).

Combine sifted dry ingredients in separate bowl.

Combine wet ingredients in separate bowl.

Add dry ingredients to wet ingredients slowly. Bake at 350-degrees. for 20 minutes.
