A standard potato salad recipe with celery, bell peppers, onion and calorie saving fat free mayonnaise.

Potato Salad

Ingredients

6 medium whole potatoes, peeled and cooked
6 whole hard boiled eggs, chopped
2 stalks celery, sliced thin
1/2 cup bell peppers, chopped
1/2 cup onions, chopped
1-1/4 cup fat free mayonnaise
1 tablespoon white vinegar
1/2 cup prepared mustard
1/4 cup pickle relish
1-1/2 teaspoon salt
1/2 teaspoon black pepper

Recipe Directions

In a covered saucepan, cook potatoes in boiling water for 20 minutes. Peel and cube them. Let chill overnight. In a covered saucepan, cook eggs for 15 minutes. In a mixing bowl, combine, egg whites, celery, peppers, onions, mayonnaise, vinegar, mustard, relish, salt, and black pepper until thoroughly combined. Then, add potatoes. Chill for 6 to 24 hours.

Bavarian German Potato Salad

Bavarian German Potato Salad has the very distinctive and delicious Bavarian flavor.

Bavarian German Potato Salad

8 medium baking potatoes
1/2 cup vinegar
1/2 cup boiling water
1 teaspoon salt
1 small onion, finely chopped
Ground black pepper

Boil potatoes (whole). Peel potatoes while hot, place in mixing bowl and mash with a fork. Add equal parts vinegar and boiling water to taste. Add 1 to 1-1/2 teaspoon salt. Add 1 small to medium finely chopped onion; stir.

Consistency should be like wet mashed potatoes. Taste it and add a little more water and/or vinegar if necessary (depending on your own individual taste preferences) Mix well and transfer to serving bowl. Sprinkle with pepper.

Cover the Bavarian German Potato Salad and let chill overnight (this is important).
