Honey Popcorn Balls
Low Calorie Recipe
Crunchy delicious honey popcorn balls sweetened with honey, brown sugar and granulated sugar. Great anytime treat!
2 quarts air-popped popcorn
1/2 cup brown sugar, packed
1/2 cup granulated sugar
1/4 cup honey
1/3 cup water
1 tablespoon reduced fat margarine
Preheat oven to 300 degrees. Place popped corn in oven while preparing glaze.
In a 2-quart pan, combine sugars, honey, and water. Cook until sugar is completely dissolved. Cook to 248 degrees on candy thermometer or until firm ball stage. Add margarine. Mix well. Pour over warm popcorn; tossing to coat completely. Cool slightly. With buttered hands, shape into balls.

Variation: Honey Crunch Popcorn
The sweet taste of honey with crunchy pecans and brown sugar mixed into hot air popped popcorn.
12 cups hot air-popped popcorn
1/2 cup chopped pecans
1/2 cup firmly packed brown sugar
1/2 cup honey
Preheat oven to 300-degrees. Spray large nonstick sheet with nonstick cooking spray. Combine popcorn and pecans in large bowl; mix lightly. Set aside. Combine brown sugar and honey in small saucepan.
Cook over medium heat just until brown sugar is dissolved and mixture comes to a boil, stirring occasionally. Pour over popcorn mixture; toss lightly to coat evenly. Transfer to prepared baking sheet. Bake 30 minutes, stirring after 15 minutes. Spray large sheet of waxed paper with nonstick cooking spray. Transfer popcorn to prepared waxed paper to cool. Store in airtight containers. Recipe makes 12 servings.
