Frozen Bread Dough
Low Calorie Recipe
This recipe for Frozen Bread Dough will make three loaves with reduced calories and fat that you can keep in your freezer until ready to bake.
2-1/2 cups unbleached flour
2 packages dry yeast
2 cups skim milk
3 tablespoons reduced fat margarine, melted
1/3 cup granulated sugar
2 teaspoons salt
2 whole eggs
5-1/2 cups unbleached flour
In a mixing bowl, combine 2-1/2 cups flour and yeast. In a saucepan, heat milk, margarine, sugar, and salt just until warm, 115 to 120 degrees, stirring constantly until margarine almost melts. Add liquid to dry ingredients in mixing bowl along with eggs. Beat at low speed for 1/2 minute, scraping sides of bowl constantly. Beat 3 minutes at high speed. Stir in remaining flour as you can mix in with a spoon.
Turn out onto a lightly floured surface. Knead in enough flour to make a stiff dough that is smooth and elastic (6 to 8 minutes total). Divide dough into thirds. Shape each of 2 portions into loaves. Store in freezer container with a double thickness of waxed paper between. Divide remaining dough into 16 balls. Arrange balls one inch apart in a freezer container.
If you wish to cut some of the sugar, you can use a granulated sugar substitute in place of the sugar.
Yields: 3-1/2 pounds (30 servings) or 2 loaves and 16 rolls

Honey Bee Coffee Bread

1 pound frozen bread dough, thawed
1/3 cup brown sugar, packed
1/3 cup honey
1/3 cup walnuts, chopped
1/2 tablespoon cinnamon
1 tablespoon reduced fat margarine, melted
Prepare a 9-inch round cake pan with cooking spray; set aside. On a lightly floured surface, roll dough out to a 12 x 16-inch rectangle. Sprinkle brown sugar over top. Beginning at narrow end, roll up jelly-roll fashion. Spread honey in bottom of prepared pan. Sprinkle walnuts and cinnamon over honey in pan. Cut rolled dough into sixteen pieces.
Place pieces, cut side down, in pan. Brush rolls with margarine. Let rise until tripled in size. Bake in a 375-degree oven for 30 minutes, or until golden brown. Turn out of pan immediately onto serving platter. Recipe makes 16 servings.
