Gluten Free Recipes
This makes a nice tender Vanilla Cake with vanilla sugar giving it its light, refreshing vanilla flavor. Also known as Brazilian Dessert.
4 tablespoons gluten free margarine
2 cups sugar
14 ounces rice flour
3 tablespoons corn starch
1 cup milk
1 tablespoon gluten free baking powder
1 tablespoon vanilla sugar
Beat margarine, egg yolks and sugar until creamy.
Add rice flour, corn starch, vanilla sugar and milk, and beat for a few minutes.
Add gluten free baking powder and gently mix.
Add beaten egg whites (beat egg whites for five minutes, until foamy).
Preheat oven to 350-degrees and bake for 40 minutes, or until golden.
Vanilla Whipped Cream Cake
This cake is really made with whipping cream in the batter. Vanilla lends just the right amount of flavor.
1-1/2 cup super fine gluten-free white rice flour
2 teaspoons gluten-free baking powder
1/2 teaspoon salt
1 cup whipping cream
2 eggs or egg substitute
1 cup sugar
1/4 teaspoon gluten-free vanilla powder
Preheat oven to 350-degrees.
Into medium bowl, sift together White Rice Flour, Gluten-Free Baking Powder and salt. Set aside.
In another bowl, beat whipping cream until stiff. Add eggs, sugar and vanilla extract OR the Gluten-Free Vanilla Powder and continue beating. Mix in dry ingredients. Spread in greased 8-by-8-inch pan.
Bake in preheated oven 30 to 35 minutes or until cake springs back when pressed with finger. Remove cake from oven and cool in pan on rack. Top as desired.
Variation: Golden Cake
This Golden Cake stays very moist. Will taste wonderful if you have not been able to have cake in a long time.
1 cup super fine white rice flour
3/4 cup sugar
3 teaspoons baking powder
1/4 cup softened butter
1/2 cup milk
1 to 2 teaspoons GF vanilla extract
1 teaspoon real cider vinegar
Sift dry ingredients together.
Drop in butter, 1/4 cup of milk and vanilla. Beat for 2 minutes. Add the rest of the milk and eggs. Beat 2 minutes more.
Turn into a greased 9 or 10 inch round layer cake pan. Bake for about 30 minutes in a 350 degree oven. Cool and turn out on a plate and frost.
For the vinegar, be sure you don't use distilled vinegar because it may be from a grain that you don't want.
Yield: 1 layer cake
