A very tasty and crunchy cole slaw recipe with carrots, green bell pepper, onions and taste-adding seasonings. Truly a Stay Crisp Slaw!

Stay Crisp Slaw

Recipe Ingredients

8 cups cabbage sliced fine
2 grated carrots
1 green bell pepper, chopped
1/2 cup onions
1 envelope unflavored gelatin softened in 1/4-cup water
2 teaspoons celery seed
1 teaspoon salt
1/4 teaspoon pepper
2/3 cup apple cider vinegar
2/3 cup sugar
2/3 cup corn oil

Recipe Directions

Mix first four ingredients together and sprinkle with 1/2-cup water; put in refrigerator to crisp.

Combine vinegar, sugar, salt, celery seed and pepper in 1-quart glass measure. Heat in the microwave for 2 to 3-1/2 minutes or until it begins to boil.

Add the softened gelatin and stir well. Set aside to cool. When mixture begins to jell, beat in the oil.

Drain water off the vegetables and add the dressing.

Keeps in the refrigerator for several days.

Optional Garnishes

  • 4 green onions, chopped.
  • Flaked coconut.
  • Chopped peanuts.
