Potato Flour Sponge Cake is very much like a standard sponge cake with your choice of either rice or potato flour as a flour substitute.
This recipe makes a nice large tube cake that serves up to twelve!
5 egg whites
1-1/2 cup sugar
1/2 cup water
1/3 cup wheat flour >
1/2 teaspoon cream of tartar
1 teaspoon lemon extract
Flour a non-stick 9-inch angel food cake pan.
Beat the egg whites until stiff.
Cook the sugar and water until the sirup threads. Add this sirup to the egg whites and beat well.
Sift the potato flour, wheat flour, and cream of tartar three times, and then fold into the mixture
Add the flavoring, turn into a pan, and bake for about 40 minutes.
About Potato Flour
Potato flour is ground from peeled, dried potatoes. It can make a very moist yeast bread with a long shelf life. Potato flour also makes the dough easier to handle. Potato flour has a definite potato flavor.
Potato flour should not be confused with potato starch. Potato starch is made only from the starch of the potato. Substituting potato flour for potato starch in a recipe will take you from fluffy homemade treats to little gluten free hockey pucks.
