Gluten Free Coffee Cake

This gluten free coffee cake is great for all occasions and tastes very appealing. Simple to make with a nice spiced topping. The cake uses olive oil - also known as "liquid gold" because it's considered a "good" fat.
1/4 cup olive oil
1 beaten egg or egg substitute equal to one egg
1/2 cup milk
1-1/2 cup gluten free flour* plus 1-1/2-teaspoon xanthan gum
3/4 cup sugar
2 teaspoons gluten-free baking powder
Mix Together Spicy Topping: Combine 1/2-cup gluten free brown sugar, 2-tablespoons gluten free flour, 2-teaspoons ground gluten free cinnamon , 2-tablespoons melted butter, 3/4-cup broken nuts of your choice.
Combine olive oil, egg, and milk. Sift dry ingredients and add, mixing will.
Pour into greased 9 x 9 x 2-inch pan. Sprinkle with Spicy Topping.
Bake at 375-degrees for about 25 minutes.
Whipped Cream Topping
Whip 1 plus 1/2-pint whipping cream and spread over filling, serve.
Store pie in refrigerator up to 24 hours.
