Two delicious variations of chai tea.
Green Chai Tea
A creamy green chai tea with the inclusion of soy milk. Spiced with cinnamon, cloves and cardamom.
This recipe is gluten free, dairy free and detox friendly.
1-1/2 cup soy milk
2 teaspoons green tea leaves
1-1/2 inch cinnamon stick, crumbled
5 green cardamom pods, lightly crushed
5 whole cloves
2 teaspoons grated fresh ginger
Sugar or honey, to sweeten
Pour milk and 1/2 cup water into a saucepan.
Add tea, cinnamon, cardamom, cloves and ginger and bring to the boil over medium heat.
Remove from heat, cover and set aside for 5 minutes to steep.
Strain into cups, sweeten if desired, and serve hot.
Yield: 2 servings
- Tea best made just before serving.
Classic Chai Tea
In Hindi, chai is the generic word for tea. Spiced tea is masala chai, although Westerners shorten it to chai. There is really no single way to prepare this milky drink. You may want to make a double batch, as it will keep in the refrigerator for a couple of days and can be reheated or served over ice.
1 3-inch cinnamon stick
8 black peppercorns
3 cardamom pods, crushed
4 whole cloves
1 cup whole milk
2 rounded teaspoons Indian black tea, such as Assam
Combine 1 cup water with the cinnamon, peppercorns, cardamom, and cloves in a small saucepan. Let the water come to a boil slowly over medium-low heat so the spices can infuse the water. Add the milk and the tea. Heat, stirring constantly, until piping hot but not boiling, about 3 minutes. Strain into mugs and serve hot with sugar, if desired.
