Brown Rice Waffles

Brown Rice Waffles made with brown rice flour are slightly sweetened with brown sugar. Top with berries to make them delicious and nutritious.
2 cups brown rice flour
1 tablespoon gluten-free baking powder
2 tablespoons brown sugar
1/2 teaspoon salt
1-1/4 cups milk
2 eggs, separated
6 tablespoons oil
Combine egg yolks, oil and milk.
Mix dry ingredients together and slowly add to liquid ingredients.
Gently fold in stiffly beaten egg whites.
Bake in hot waffle iron. Serve with your favorite topping(s).

Brown Rice Flour Tips
- Brown rice flour should be stored in an airtight container in your refrigerator as it spoils easily due to its high oil content, and can take on odors from other foods you are storing.
- Brown rice flour is darker in color and rougher in texture than conventional wheat flours. However, it is much higher in B vitamins, iron, and fiber.
- Baked goods made with brown rice flour can be more crumbly than those made with conventional wheat flours, so you may need to add binding agents like arrowroot powder or additional eggs to your recipe in order to make your baked goods more cohesive.
