Gluten Free Recipes
Serve this delicious asparagus soup on its own, served with your favorite gluten free bread, topped with Hummus. Makes a wonderful meal for for two. This recipe is gluten and dairy free.
1 tablespoon olive oil
1 onion, chopped
1 clove garlic, chopped or
10 ounces trimmed, chopped asparagus
1 large potato, chopped >
2 cups vegetable stock, or water
1 tablespoon lemon juice
2 teaspoons thyme leaves, to serve
Extra virgin olive oil, to serve
Heat oil in a saucepan and cook onion over low heat until soft. Add garlic, asparagus and potato and stir over medium heat for 1 minute. Add stock or water, season to taste and bring to a boil, then simmer over low heat until vegetables are soft.
Using a food processor or hand held blender, blend soup until smooth, adding a little more hot stock or water if too thick. Check seasoning, then return soup to pan to heat through. Just before serving, stir in lemon juice.
Garnish with thyme leaves and a drizzle of extra virgin olive oil on the side.
Reheat soup, check seasoning and serve in warm bowls topped with a drizzle of chive oil and a spoonful of minced olives. Serve hot or cold with corn bread.
Soup can be prepared a day ahead, but will lose its vibrant color.
Yield: 3 cups
Serving size: 1 cup
Homemade Chive Oil
Blend together 1/4 cup olive oil and 2 tablespoons fresh chives. Stand for 1 hour for flavors to develop.
