Stewed Peaches

Stewing, or gently poaching, fruit is a fantastic way of altering your perceived flavor of it. When stewed together with a little sugar and sometimes water (or maybe some alcohol like wine, port, brandy, rum or sherry) and spices, all types of fruit can take on a whole different taste sensation. In fact, the inspiration and flavor combinations from drinks like Dr Pepper and Vimto came from stewing fruit! Stewed fruits take on the most amazing flavors and are completely good for you!

1/4 cup granulated sugar substitute
4 whole cloves
1-1/2 pounds peaches, peeled and halved

Recipe Instructions

In medium saucepan over medium heat, heat sugar, 3/4 cup water and cloves to boiling.

Add peaches; return to boiling.

Reduce heat to low; cover and simmer 10 minutes or until tender. Yield: 6 servings.

Grilled Peaches

Firm fruits like apples, pears and pineapple are delicious and easy to grill. Softer fruits like mango, papaya, peaches and nectarines require special attention since they cook quickly, and if overcooked, will reduce to a mush. These fruits need only to be heated and not "cooked." You might also like to try bananas, tangerines and pineapples grilled in their skins

Many fruits, including bananas, pineapples, peaches, plums, apples, and pears can be cut in half, pitted or cored, and grilled. Oranges and other juicy fruits do best cut into thick slices. In general, leaving the skin or peel on the fruit helps it maintain its structural integrity as it cooks.

To grill a peach (or any other fresh fruit) ...

Cut into wedges and flip right on the grill. The heat of the grill will release natural sugars and cause the fruit to begin the carmelization process. Grill for about two minutes per side.

Enhance the sweetness of the fruit by splashing with a few drops of aged balsamic vinegar.

Other good grilling choices are pineapple, plum, nectarine, banana, mango and cantaloupe.
