Two Coffee Latte recipes adapted for the diabetic diet. One spiced with cinnamon and nutmeg and an Iced Mocha Latte.

Coffee Latte - Spiced

A delicious coffee latte that is a rich grind of espresso spiced with cinnamon and nutmeg.


1-1/4 cup regular grind espresso or other dark coffee roast
1 cinnamon stick, broken into pieces
6 cups hot water
1/3 cup hot measurable sweetener or eight packets
2-1/2 cups hot skim milk
Ground cinnamon or nutmeg


Place espresso and cinnamon stick in filter basket of drip coffee pot; brew coffee with water. Stir in sweetener, pour into eight mugs or cups.

Heat milk in saucepan until steaming. Process half the milk in blender at high speed until foamy, about 15 seconds; pour milk into four mugs, spooning foam on top. Repeat with remaining milk and coffee. Sprinkle with cinnamon or nutmeg before serving. Recipe makes 8 servings. Serving Size: 8 ounces.

Iced Mocha Coffee Latte

Iced Mocha Coffee Latte contains Dutch Cocoa with no calorie sweetener, instant coffee and fat free half and half. Make this creamy, warm and oh so good on a cold winter's day!


2/3 cup granular sweetener
2 tablespoons Dutch process cocoa
2 tablespoons instant coffee granules
2 cups boiling water
2 cups fat free half and half, divided

Optional Garnish

  1. Cool Whip
  2. Chocolate curls


Combine sweetener, cocoa and coffee in a small bowl. Gradually whisk in boiling water, whisking until blended.

Stir in 1 cup half and half. Pour mixture into ice cube trays. Freeze 8 hours.

Pour remaining 1 cup half and half in blender. Gradually add frozen mocha cubes, blending until smooth.

Serve immediately. Garnish with chocolate curls and whipped topping, if desired.
