These blintzes are actually crepes with creamed cottage cheese, vanilla, lemon. Also included is a recipe for Kaese Blintzes.
Kaese Blintzes, also known as rolled cheese pancakes, use both dry cottage cheese and pot cheese, or low fat ricotta cheese. Served with yogurt.
1 cup dry cottage cheese
1 cup pot cheese or lowfat ricotta cheese
1 tablespoon sugar
1 cup flour
1 cup lowfat milk
2 tablespoons butter
Plain lowfat yogurt
Make the cheese filling by beating cottage cheese, pot cheese, 1 egg and sugar together. Combine the flour and milk with the 3 eggs. Beat to make a smooth batter.
Heat a 6 or 8-inch skillet. Coat with vegetable oil and pour in 2 to 3 tablespoons of the batter. Tilt the pan to distribute the batter over the bottom of the skillet. Cook until the dough is firm and browned.
Remove from the pan and place on a lightly-oiled plate with browned side up. Spoon 1 tablespoon of filling onto the edge of the pancake. Roll up by bringing the edge with the filling to the center of the pancake, fold in each side, and fold over once more to make a sealed pouch. Continue with the rest of the batter.
When ready to serve, heat the butter in a skillet. Fry the blintzes until golden brown on all sides. Serve with yogurt.

12 low calorie crepes
1 cup creamed cottage cheese
2 tablespoons granulated sugar replacement
1 teaspoon vanilla extract
1/2 teaspoon lemon peel (grated)
2 tablespoons powdered sugar replacement
Reserve low calorie crepes. Combine cottage cheese, granulated sugar replacement, vanilla and lemon peel in mixing bowl. Whip with fork until thoroughly blended. Fill each low calorie crepe with heaping 1 tablespoon of cottage cheese filling, roll each one to form blintzes and place in shallow pan.
Bake blintzes at 350-degrees for 15 minutes, or until the blintzes are warm. Sift the powdered sugar replacement over the blintzes.
Microwave: Cook blintzes on medium for one minute. Sift the powdered sugar replacement over the blintzes.
