Five variations of peanut butter cookies - three similar to standard peanut butter cookies, but one omits flour completely. Then we have a variation with the addition of sweet bananas. Last but certainly not least, a peanut butter oatmeal cookie that packs quite a nutritional punch!

Peanut Butter Cookies

Peanut Butter Cookies I

These makes pretty standard peanut butter cookies with the only change the sugar replacement.

1/4 cup margarine
1/4 cup creamy peanut butter
2 tablespoons granulated sugar replacement
1 egg
1/4 cup water
1 teaspoon vanilla extract
1-1/2 cup flour
1 teaspoon baking soda
1/2 teaspoon baking powder


Cream together margarine, peanut butter and sugar replacements. add egg, water and vanilla, beating until fluffy.

Combine flour, baking soda and baking powder in sifter and sift dry ingredients into creamed mixture. Stir to blend completely.

Chill thoroughly, at least two hours or overnight.

Drop by teaspoonfuls onto lightly greased cookie sheets, two to three inches apart. Press flat with a floured bottom of a small glass. Bake at 375-degrees for 12 to 15 minutes.

Note: If desired, sprinkle with a dusting of sugar just prior to baking.

Peanut Butter Cookies II

Just your basic peanut butter cookie is all you need at times and this recipe will suit those times perfectly with basic ingredients and tasty peanut butter flavor. This recipe makes a small batch.

Tower of peanut butter cookies

1/3 cup plain flour
1/4 teaspoon baking soda
1/4 teaspoon baking powder
Pinch salt
2 tablespoons shortening
2 tablespoons peanut butter
1 teaspoon Sweet 'n Low
1 egg, beaten

Mix and stir all ingredients in order (flour, baking soda, baking powder, salt, shortening, peanut butter and Sweet 'n Low). Add beaten egg and mix well.

Drop by large teaspoon on greased cookie sheet. Bake Peanut Butter Cookies at 350 degrees for 10 minutes.

Peanut Butter Banana Cookies

Peanut butter and banana go so well together and these cookies are no exception! A little apple juice concentrate and chopped peanuts puts these over the top.

1/4 cup butter
1/2 cup mashed bananas
1/2 cup peanut butter
1 egg
1/4 cup thawed, frozen unsweetened apple juice concentrate
1 teaspoon vanilla
1 cup flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup salted peanuts, chopped whole peanuts; optional

Preheat oven to 375 degrees.

Beat butter in large bowl until creamy. Add banana and peanut butter; beat until smooth. Blend in egg, apple juice concentrate and vanilla. Beat in flour, soda and salt. Stir in chopped peanuts.

Drop by teaspoonfuls onto lightly greased cookie sheets; top each with a whole peanut. Bake 8 minutes or until set. Cool on rack and store in tightly covered container. Recipe makes about 24 cookies.


Peanut Butter Oatmeal Cookies

Peanut Butter Oatmeal Cookies are light in salt, light in fat and very light on sugar. Full of wholesome goodness thanks to the peanut butter and oatmeal. Both of which pack a nutritional punch.

2/3 cup oatmeal
2 cups flour
1 teaspoon Lite salt
1/4 teaspoon soda
2 teapoons baking powder
1/3 cup corn oil
2/3 cup salt free peanut butter
1/4 cup egg substitute
1 egg
3 tablespoons skim milk
4 tablespoons liquid sweetener
2 tablespoons sugar substitute

Preheat oven to 350-degrees.

Sift flour, salt, soda, and baking powder. Cream next six ingredients together add oatmeal, beat. Add flour mixture, stir until it forms a ball; roll into 1-inch balls. Place on ungreased cookie sheet. Press down with glass. Bake at 375 degrees for ten minutes.

Recipe makes about 2 dozen Peanut Butter Oatmeal Cookies at approximately 35 calories per cookie.


Bonus: Healthy Banana Cookies

3 ripe bananas
1 cup dates, pitted and chopped
2 cups rolled oats
1/3 cup vegetable oil
1 teaspoon vanilla extract

Preheat oven to 350-degrees. In a large bowl, mash the bananas. Stir in oats, dates, oil, and vanilla. Mix well, and allow to sit for 15 minutes. Drop by teaspoonfuls onto an ungreased cookie sheet. Bake for 20 minutes in the preheated oven, or until light brown.
