Recipe Ingredients

1 cup quick cooking oatmeal
1 cup orange juice
2 cup uncooked oat bran
2/3 cup flour
1/2 cup nonfat dry milk
2 teaspoons baking powder
1/2 teaspoon baking soda
Dash salt
1/3 cup granulated sugar replacement
1/3 cup granulated fructose
1/4 cup vegetable oil
2 eggs
2 teaspoons vanilla extract


Recipe Directions

Soak oatmeal in orange juice in a large bowl for at least 15 minutes.

Combine the next six ingredients in a large mixing bowl. Stir in the remaining ingredients into the oatmeal mixture. Add oat-bran mixture and stir to mix. Turn into a greased 13 x 9 x 2-inch baking pan. Bake at 425-degrees for 25-30 minutes or until a toothpick inserted near the center comes out clean. Cool.
