Orange Cranberry Cookies
Orange juice concentrate and orange peel team up with dried cranberries to make these tasty Orange Cranberry Cookies. These are holiday worthy cookies. Optional walnuts lend a nice crunch.
1/4 cup margarine
3 tablespoons frozen orange juice concentrate
3/4 cup all-purpose flour, sifted
1/4 cup rolled oats
Sweetener equal to 2-1/2 teaspoons sugar
1/4 cup teaspoon baking soda
1/8 teaspoon cream of tarter
1 teaspoon orange peel
1/2 cup dried cranberries
1/2 cup chopped walnuts (optional)
Cream margarine in a medium bowl. Beat in egg and frozen orange juice concentrate.
Combine flour, rolled oats, sweetener, baking soda, cream of tarter, salt and orange peel in a seperate bowl. Add dry ingredients into the creamed mixture and mix well. Stir in dried cranberries and chopped walnuts.
Drop by teaspoons onto a lightly sprayed non-stick cookie sheet. Bake at 375-degrees for nine to ten minutes until bottoms are lightly browned. Cool on wire racks.
