Mint Chip Cookies
Peppermint is more than just a candy flavor. This herb promotes healthy digestion by soothing and comforting the stomach. Peppermint is frequently used in herbal teas and capsules.
1/2 cup softened margarine
1 teaspoon vanilla
1/4 cup non-fat dry milk
1/2 cup Sugar Twin
1/4 cup water
1 cup flour
1/2 teaspoon baking soda
2 ounces mint chips
In a mixing bowl, combine margarine, sour cream, apple, eggs, maple flavoring and vanilla.
Combine flour, sweetener, baking soda and baking powder; add to apple mixture and mix well. Drop by heaping tablespoonfuls onto baking sheets coated with nonstick cooking spray.
Bake at 375-degrees for nine to ten minutes or until lightly browned. If desired, top each cookie with a walnut. Cool on wire racks. Store in an airtight container.
