Prickly Pear Candy
Prickly Pear Candy gives you the weight busting benefits of the succulent and nutritous cactus plant, prickly pear. Prickly pear fights fat and is nutritious! The pads of the prickly pear cactus are high in iron, beta carotene, vitamin C, and calcium.
1 cup strained prickly pear tuna juice
1 cup granulated white sugar
Wash and chop prickly pear tunas as previously instructed here. Cover chopped fruit with water even with level of tunas in pan. Cook over medium heat for approximately 20 minutes. Use cheese cloth and a colander to strain liquid from cooked prickly pear fruit. Strain 2 to 4 times.
Heat strained prickly pear tuna juice to a rolling boil and add sugar. Stir until sugar is dissolved into juice completely. Remove pan from heat and promptly pour mixture on cookie sheet covered with parchment paper.
Place candy into 350 degree oven for about 5 minutes. Remove prickly pear candy from oven and allow to cool.
Cut candy into serving size pieces and wrap in plastic wrap for your later enjoyment.
