No Bake Peanut Butter Munchies

This no-bake peanut butter treat is great anytime, but especially nice on those hot summer days. No Bake Peanut Butter Munchies are reduced in fat so you can eat and share with less guilt.

No Bake Peanut Butter Munchies

Recipe Ingredients

2 tablespoons butter
2 tablespoons creamy reduced-fat peanut butter
3 cups miniature marshmallows (about 6 ounces)
2-1/2 cups low-fat granola
3 tablespoons dark raisins

Recipe Directions

Spray an 8-inch square baking pan with vegetable cooking spray. Set aside.

In a large saucepan, combine butter and peanut butter. Cook peanut butter mixture over low heat, stirring frequently, until melted and smooth, about 1 minute.

Add marshmallows; cover and cook, stirring occasionally, until marshmallows melt, about 5 minutes. Remove from heat.

Stir in granola and raisins. Shape into balls or spread mixture into prepared pan and cool. Cut into squares.

Peanut Candy

1 pound whitecote chocolate coating
1/2 cup peanut butter

In the top of a double boiler, melt coating over hot, not boiling, water. Add peanut butter. and blend until smooth. Fill peanut molds almost full and chill in freezer until firm. Turn over and tap peanuts from molds. Recipe makes about 75 peanuts.

Peanut Butter Candy Slices

More peanut butter treats! These Peanut Butter Candy Slices include pecans, vanilla, raisins and honey. Slice into circular treats. Plus I have Peanut Butter Candy for those who may not enjoy nuts. They contain raisins and use graham cracker pieces for a nice candy crunch.

Recipe Ingredients

1 cup creamy peanut butter
3/4 cup chopped pecans
1-1/4 teaspoon pure vanilla extract
1 cup chopped raisins
1/4 cup honey

Recipe Directions

Mix all of the ingredients together. If not firm enough, add more nuts or if too firm add more honey. Form into 3 long rolls. Roll in finely chopped peanuts, wrap and chill until firm. Slice into 1/2-inch slices and serve.

Peanut Butter Candy

2 tablespoons peanut butter
2 tablespoons milk
2 tablespoons raisins
1 medium size graham cracker
1/2 teaspoon Liquid Sweetener
1 teaspoon of vanilla

Cream peanut butter until smooth. Blend in 1-tablespoon milk. Add raisins and mix well. Break graham cracker into small pieces and mix with other ingredients. Add rest of milk, sweetener, and vanilla. Form into balls.

Diabetic Exchange:  1 Meat Substitute; 1 Fruit; 1/2 Bread. Subtract milk from daily allowance.

Diabetic Friendly No Bake Peanut Butter Snack

For this satisfying peanut butter snack, break up graham crackers and mix with peanut butter, milk, raisins, sweetener and vanilla.

2 tablespoons peanut butter
2 tablespoons of milk
2 tablespoons raisins
1 medium graham cracker
1/2 teaspoon liquid artificial sweetener
1 teaspoon vanilla

Recipe Directions

Cream peanut butter until smooth. Blend in 1 tablespoon milk. Add raisins and mix well. Break graham cracker into small pieces and mix with other ingredients. Add rest of milk, sweetener, and vanilla. Form into Peanut Butter Snack balls.

Substitution: 1 meat substitute; 1 fruit; 1/2 slice bread. Subtract milk from daily allowance.

Variation: Diabetic Friendly No Bake Honey Peanut Butter Bites

Made from a mixture of ground peanuts, natural sweeteners and salt.

1 teaspoon natural peanut butter
1/2 teaspoon honey
8 Cheddar cheese crackers

Place the peanut butter and honey in a small bowl and mix well. Using a knife, place 1/4 of the mixture on each of 4 crackers. Top with the remaining 4 crackers. 1 serving.
