Frankly Fake Fudge uses reduced fat milk, cocoa powder, artificial sweetener and unflavored gelatin to hold it all intact. Create an interesting fake fudge. A touch of brandy extract adds a tasty adult twist.

The following fudge recipes are considered "fake" because they resemble fudge more than they actually are fudge. There are 5 options to choose from - hopefully one (or more) will please your palate.

Frankly Fake Fudge

1 cup 2-percent milk
3/4 cup raw cocoa powder
5 tablespoons unflavored gelatin (5 packages) 1 cup water
1/2 cup sweetener equal to sugar**
1 teaspoon brandy extract


In small saucepan, combine milk and cocoa. Whisk until there are no lumps of cocoa. Cook over medium heat, stirring for about 5 minutes or until thickened. (This cooks out the raw cocoa taste.)

In another small saucepan, sprinkle gelatin over water; let stand for 5 minutes to soften.

Heat over low heat, stirring, until gelatin dissolves. Stir into cocoa mixture.

Stir in sweetener (artificial sweetener such as Sugar Twin equivalent to 1/2 cup sugar) and brandy extract. Remove from heat. Pour into 8 inch square baking dish. Let stand at room temperature 4 hours or until firm.

To remove from pan, cut around edges with a sharp knife. Place dish in shallow pan of hot water for about 30 seconds just to slightly soften bottom. Loosen one corner, then quickly flip gel out onto clean cutting surface.

With sharp knife, cut evenly in 10 one way and 10 the other way. Place in container, cover and refrigerate. Will keep up to 1 week in refrigerator.

Frankly Fake Diet Fudge

This is a fake fudge but still a real diet fudge! The recipe has been revamped to reduce fat and calories without reducing the rich fudgy treat so many of us enjoy. Cereal crumbs add a nice crunch.

1 13-ounce can skim evaporated milk
3 tablespoons cocoa powder
1/4 cup butter
1 tablespoon granulated sugar replacement
Dash salt
1 teaspoon vanilla extract
2-1/2 cups unsweetened cereal crumbs
1/4 cup nuts, very finely chopped

Combine milk and cocoa in saucepan; cook and beat over low heat until cocoa is dissolved. Add butter, sugar replacement, salt and vanilla. Bring to a boil; reduce heat and cook for 2 minutes. Remove from heat; add cereal crumbs and work in with wooden spoon. Cool 15 minutes.

Divide in half; roll each half into a tube, 8 inch long. Roll each tube in finely chopped nuts. Wrap in waxed paper; chill overnight. Cut into 1/4 inch slices.

Creamy Guilt-Free Fudge

This creamy fudge is everything you would expect in a fudge; creamy, very chocolate-y, and has reduced fat ingredients to take away some of the guilt!

2/3 cup low-fat sweetened condensed milk
1-1/2 cups semi-sweet chocolate chips
3/4 teaspoon vanilla extract
1 pinch salt

In a medium-sized saucepan, melt chocolate chips in sweetened condensed milk over medium-low heat. Stir in vanilla and salt. Pour chocolate mixture into ungreased 10 inch square pan. Chill several hours until set. Cut into squares. Makes 1 - 10 inch square pan.


Diabetic Frankly Fake Fudge

Diabetic Frankly Fake Fudge

Delicious Diabetic Frankly Fudge made with graham cracker crumbs, cocoa, evaporated milk and liquid sweetener to keep the sugar content down.

1 cup 2 percent milk
1 cup water
3/4 cup unsweetened cocoa powder
5 tablespoons unflavored gelatin
1/2 cup sweetener equal to 1/2 cup sugar
1 teaspoon brandy extract

Combine milk and cocoa in a small sauce pan, whisk until lumps of cocoa are gone. Heat over medium flame until thick (about 5 minutes).

In a separate saucepan pour the gelatin into the water, mix and let stand for about 5 minutes. Now heat over low heat or until gelatin dissolves. Pour into cocoa/milk mixture. Stir in non-sugar sweetener and brandy extract.

Remove from heat. Pour into prepared 9 x 9 inch dish. Refrigerate until chilled and cut into squares.


Sugar Free Cream Cheese Fudge

Cream Cheese

The cream cheese in this fudge makes it creamy and rich while unsweetened chocolate gives it a nice fudge flavor.

16 ounces cream cheese, softened
2 ounces unsweetened chocolate (squares)
1/2 cup sugar substitute (Stevia, Splenda)
1 teaspoon vanilla extract
1/2 cup chopped pecans

In a small mixing bowl, beat the cream cheese, chocolate, sweetener and vanilla until smooth. Stir in pecans. Pour into 8-inch square baking pan lined with foil. Cover and refrigerate overnight. Cut into 16 squares. Serve chilled.
