Chocolate Truffles Recipe

Candy Recipe

These chocolate truffles have the addition of cream cheese and graham crackers along with the standard powdered sugar and almonds, which are optional. Having said that, note that almonds are extremely nutrient-rich; a handful (one-ounce or about 23 almonds) is an excellent source of vitamin E. Almonds are also rich in protein (6 grams per ounce), as well as magnesium and manganese and area good source of copper, fiber and the B vitamin riboflavin. Low carb variation follows.

4 tablespoons whipping cream> room temperature
2 teaspoons vanilla extract
1 ounce crushed macadamia nuts (optional)

Spread evenly into a small, parchment lined loaf pan, 4 by 7 inches works well. Chill until firm. Cut into pieces and store in the freezer.

Recipe Notes

  • The success of this recipe depends upon the melted chocolate and butter being at the same temperature. If not, the chocolate and butter will separate.
  • This recipe yields as many Low Carb Chocolate Truffle pieces as you cut it into!
  • The better quality chocolate has a smoother texture than the more commonly available Baker's chocolate due to its high cocoa butter content. Callebaut, Valrhona and Scharffen Berger are all good choices.
