Candied Yams and Candied Oranges
While Candied Yams and Candied Oranges are not officially candy, these treats are so tasty, they'll satisfy a candy craving! A small amount of butter and orange juice give these yams lots of flavor but little fat.
3 medium yams (1-1/2 cups)
1/4 cup brown sugar, packed
1 teaspoon flour, sifted
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon orange peel
1 teaspoon soft tub butter
1/2 cup orange juice
Cut yams in half and boil until tender but firm (about 20 minutes). When cool enough to handle, peel and slice into 1/4-inch thickness.
Combine sugar, flour, salt, cinnamon, nutmeg, and grated orange peel.
Place half of the sliced yams in a medium-sized casserole dish. Sprinkle with spiced sugar mixture. Dot with half the amount of butter.
Add a second layer of yams, using the rest of the ingredients in the same order as above. Add orange juice.
Bake uncovered in oven preheated to 350 degrees for 20 minutes.

Candied Oranges Recipe
The following recipe is a very, very old recipe that was in my grandmother's vast collection of recipes. These are citrusy-delicious! It is posted just as written in her notes.
Candied orange is a great delicacy, which is easily made: Peel and quarter the oranges; make a syrup in the proportion of one pound of sugar to one pint of water; let it boil until it will harden in water; then take it from the fire and dip the quarters of orange in the syrup; let them drain on a fine sieve placed over a platter so that the syrup will not be wasted; let them drain thus until cool, when the sugar will crystallize. These are nice served with the last course of dinner. Any fruit the same.
Extra: Sunny Citrus Cubes
4 tablespoons unflavored gelatin
3/4 cup unsweetened grapefruit juice
2 cups unsweetened orange juice, boiling
1 teaspoon orange extract
2 tablespoons sugar
1/4 cup walnuts, chopped (optional)
Soften gelatin in grapefruit juice. Add orange juice, orange extract and sugar. Stir until dissolved. Pour into 8-inch square pan. Chill until partially set. Sprinkle with walnuts if you wish. Yield: 16 pieces, 2-inch x 2-inch
