Carob Orange Cookies
Wheat Free Recipe
These make tasty chocolate flavored cookies using carob. Add a touch of elegance and indent each cookie with a spoon and fill with orange marmalade.
1-1/2 cup rice flour
1/2 cup barley flour
3 tablespoons carob powder
1 cup ground nuts
1/2 cup honey
1/2 cup water or soy milk
1 teaspoon orange extract
In large mixing bowl, mix dry ingredients together. Set aside.
Mix liquid ingredients together and then combine the liquid mixture into the dry mixture.
Bake Carob-Orange Cookies at 350-degrees for 8 to 10 minutes.
- If a softer cookie is desired, add 1/4 cup oil to liquid ingredients.
- Indent each cookie with a spoon and fill with orange marmalade.

Carob contains as much Vitamin B1 as asparagus or strawberries; as much niacin as lima beans, lentils, or peas; and more Vitamin A than eggplant, asparagus, and beets.
