Carob Orange Cookies

Wheat Free Recipe

These make tasty chocolate flavored cookies using carob. Add a touch of elegance and indent each cookie with a spoon and fill with orange marmalade.

Ingredients

1-1/2 cup rice flour
1/2 cup barley flour
3 tablespoons carob powder
1 cup ground nuts
1/2 cup honey
1/2 cup water or soy milk
1 teaspoon orange extract

Recipe Directions

Fresh carob

In large mixing bowl, mix dry ingredients together. Set aside.

Mix liquid ingredients together and then combine the liquid mixture into the dry mixture.

Bake Carob-Orange Cookies at 350-degrees for 8 to 10 minutes.

Recipe Variations

  1. If a softer cookie is desired, add 1/4 cup oil to liquid ingredients.
  2. Indent each cookie with a spoon and fill with orange marmalade.
